Lentil Patties

Ingredients
1C dried lentils3C vegetable broth or water2 bay leaves1tsp olive oil2 carrots, diced1 onion, diced3 cloves garlic, minced3oz smoked mozzarella, shredded1 TBSP fresh thyme or 1 tsp dried1/2 C dry bread crumbs1tsp salt, or to taste1/2 tsp red pepper, or to taste1 egg, lightly beaten
Directions
Bring water to a boil in a medium saucepan, stir in lentils and bay leaves. Simmer 20min or until lentils are tender. Mash up a little bit, but leave some whole. While lentils are cooking, heat oil in a small sautee pan over medium heat, stir in carrots and onions and cook until tender, about 5 min. Stir in garlic, cook until fragrant, about 30 sec. Remove from heat, mix in with lentils. To lentil mixture, add remaining ingredients. Heat a large skillet over medium heat, spray with cooking spray. Form lentils into 4 large patties, cook on both sides until browned, about 5min per side. Serves 4.
