Ingredients

    4 - 12" squares of aluminium foil
    4 fillets ( 6 0z, each) sea bass, halibut, or another firm white fish
    12 asparagus spears, woody ends removed
    4 shiitake mushrooms, stems removed
    1 Tbsp grated fresh ginger
    2 Tbsp low sodium soy sauce
    2 Tbsp mirin (sweetened rice wine) or sake

    Salt and pepper to taste

Directions

Preheat the oven to 400 degrees. Lay the foil pieces on a counter and place a fillet in the middle of each one. Scatter the asparagus, mushrooms, and ginger on top of the fish.

Drizzle each fillet with soysauce and mirin and season with a small pinch of salt and black pepper.

Fold the foil over the ingredients and crimp the edges to seal. Place the packets on a large baking sheet and bake 20 to 25 minutes, depending on the thickness of the fillets.

    I hate to give a low rating so at least I gave it three stars. I was a bit disappointed with the flavor of this dish. I should have followed my instincts and added a bit more seasoning. I thought it was just alright. The Asian taste was lost and it was very bland. Will try again with tweaking. - 8/20/19
