This salmon dinner is worthy of a restaurant. Only you will know you're doing something great for your heart in every bite!
I have used 4 pcs. (4 oz) each of Tilapia. However, that is a pretty healthy serving. You can use 1 pc., cut it in half and follow the same directions.
This is a quick and easy meal that's good for adults and children. You can add veggies to the mix OR eat them alone, or with rice, pasta, salad, or some low-fat dressing.
4 cups (about 1/2 of a 12-oz. bag) dry coleslaw mix
4 oz. cooked and chopped ready-to-eat shrimp
1/2 cup canned sliced water chestnuts, drained, cut into strips
1/4 cup bean sprouts, chopped
2 scallions, chopped
1 stalk celery, thinly sliced widthwise
2 tbsp. reduced-sodium/lite soy sauce
1 tsp. crushed garlic
1/4 tsp. ground ginger
1/8 tsp. salt
Dash black pepper
6 large square egg roll wrappers (stocked with the refrigerated Asian items in the supermarket)
Optional: sweet & sour sauce

Eggplant and salt cod is one of my favoirite meals that I load up with lots of onions, bell peppers and tomatoes. If I don't have tomatoes, I'll do with out.
I usually serve with either, plain polenta (harina de maiz or funche), boiled Carribean root vegetables, like green bananas, taro root, mountain yam, pumpkin (calabaza), breadfruit, malanga and, tanier to name a few.
This recipe tastes great on toast. I prefer Ezekial bread. This is one of our favorite comfort foods and it tastes great served with a romaine salad.
Cooking time and prep time happen together, so total time is 10 minutes.
