Chicken Chimichangas Recipes

These chimichangas are oven browned instead of deep fried. The filling uses queso fresco. If it's not avaliable, try shredded Monterey Jack.

Instead of frying these, I baked them in a hot oven for a tasty delicious low fat dish. This recipe is adapted from Foods and Flavors of San Antonio by Gloria Chadwick.

This recipe has had maybe 5 incarnations to get to the recipe I have today.

My kids love this & it is easy to customize to your taste. I used canned salsa, fresh tomatillo & dried beans but you can also used canned. I use a food processor to dice everything small.

For the rice this time I used Uncle Ben's Spanish Style Ready Rice.

The prep time does not count the time to cook rice or beans; I usually cook up a bag of beans at a time and freeze them since they take so long, this way I can just pull them out as needed.

Garnish with salsa, cheese, sour cream as desired (none are included in the nutritional values here).

My family loves these, and there fun to make with the kids!

These are healthy and low fat but don't taste like it! They're great as is, but you can dress them up however you like with salsa, sour cream, guacamole, shredded lettuce, etc.

Ingredients:
*Crisco Pure Vegetable Oil, 2 tbsp (remove)
*Onion Vidalia raw med onion, 148 gram(s) (remove)
*Goya Black Beans, 3.5 cup (remove)
Uncle Ben's Instant Whole Grain Brown Rice, 4 cup (remove)
*Chicken, Costco Kirkland Signature Rotisserie Chicken White Meat Skin Removed, 6 oz (remove)
*Chipotle Chiles in Adobo Sauce- La Costena brand 6.24.11, 1 serving (remove)
*Cheese Mexican Lucerne 2% Milk Reduced Fat 4 cheese blend shredded, 1 cup (remove)

A fast and healthier way to serve Chimichangas than the traditional deep fried. These are very good, and you may dress them up to you own preference. I like to serve with green chile sauce sometimes instead of the picante sauce.

Quick and easy. Freezes well

Serve with salsa, sour cream, shredded cheese, green onions.....these items are not included in the calorie count
