Ingredients

    8 oz. pkg light cream cheese
    8 oz. shredded cheddar, Colby jack, or pepperjack cheese
    1.5 Tbsp taco seasoning
    2 split chicken breasts, seasoned, cooked and shredded
    8 flour tortillas (soft taco size)
    cooking spray
    shredded cheese
    green onions
    sour cream
    salsa

Directions

Stir together cream cheese, cheddar cheese, and taco seasoning. Fold in chicken. Divide among flour tortillas. Tuck in sides, and roll up each tortilla. Lay seam side down in a sprayed 9x13 baking dish or sheet pan. Spray tops of tortillas with cooking spray. Bake at 350 degrees for 15 minutes. Turn chimi's over and bake an additional 15 minutes. Serve with cheese, green onions, salsa, and sour cream.
