Ingredients

    2 chicken breasts, sliced or diced
    1 tsp olive oil
    1 small onion, cut into strips
    1 green pepper, cut into strips
    1 clove garlic, finely chopped
    juice of half a lemon
    0.25 tsp salt
    0.25 tsp black pepper
    0.25 tsp chili powder (or more to taste)
    0.5 tbsp ground ginger
    0.5 tbsp ground cumin
    1 tsp oregano (dried/ground)
    1 tsp coriander leaf (dried/ground)

Directions

Fry sliced onions in oil until golden.

Add diced chicken, lemon juice, garlic and all seasoning, mix well and cook for two minutes.

Add the green pepper strips, mix well, and cook for a further 5 mins approx, until chicken is cooked through.

Makes enough for six fajitas (I normally have two for a meal).

Serve with tortillas, salsa or chopped tomato, guacamole or chopped avocado, refried beans... even some grated cheese or sour cream depending on your diet... Basically, dress it up or down as much as you like!

    These were wonderful! We really enjoyed these & plan to have again. (FYI- Coriander & Cilantro are basically the same plant. Cilantro are the leaves & Coriander are the seeds. Hope that helps some having problems with the coriander leaf) :) - 4/23/10

    Definitely the best fajita's I have ever made and maybe the best I have ever had! I added tomatoes, squash, cilantro, a dash of cayenne pepper and a splash of beer! Excellent! Thanks! - 10/3/09

    I really enjoyed this recipe. I don't like using packets because they are so high in sodium. I used lime juice instead of lemon, still came out VERY tasty! - 6/7/09

    I loved this! Even my 17 month old son loved it! I spread a little refried beans on a tortilla and then topped with chicken. Yum! - 3/5/11

    Ok ? for you what is a coriander leaf, and I'm wanting to use lemon juice how much instead off half a lemon. - 4/1/10

    Hey Brandtsgirl, it usually says on the bottle of lemon juice - they're not all the same strength. My lemon juice bottle says 1 tbsp = half a lemon.
