Ingredients

    1 lb 93% lean ground turkey
    Red, Green, and Yellow bell Peppers
    Medium Onion
    1 Can black beans
    Mexican seasoning
    Cilantro
    Jane's crazy mixed up salt (or seasoning salt)
    Black Pepper
    Whole wheat burrito wraps
    shredded cheese mix
    salsa
    Sour Cream (optional)

Directions

Combine Turkey, Onion, Peppers, black beans, and seasoning in a large skillet. Cook until Turkey is done. Put turkey mix in Burritos, sprinkle with cheese mixture, wrap burritos. Place Burritos in a large glass baking dish. Cover with Salsa and cheese, Bake at 375 for 10 minutes. Top with Sour Cream if desired.

    Just made this. YUMMY I even used the left over meat mixture and stuffed 4 green peppers (made a double batch) Instead of using rice, I used the beans. - 10/11/09

    Very Good. I would cook the turkey and drain the grease before seasoning. And I didn't use all the liquid from the black beans. I also added garlic. This is a great recipe that is so versatile. If using fresh salsa, drain most of the liquid prior to topping the dish. I would make again! - 9/10/09
