Number of Servings: 6

Ingredients

    1 pound boneless skinless chicken breast, cubed
    1 can Del Monte diced tomatoes with zesty green chiles
    1 jar Ragu Light Parmesan Alfredo sauce
    3/4 cup salsa
    1/2 envelope taco seasoning (can add more to taste)
    2 cups fresh mushroom slices

Directions

Spray a nonstick pot with Pam. Add the cubed chicken breast and cook through.
Add the diced tomatoes, salsa, and taco seasoning. Add the jar of Alfredo sauce. Stir well.
Simmer for 5-10 minutes.
Add mushrooms, and let simmer for another 5-10 minutes (until mushrooms start to turn soft).

Serve over rice

    Excellent! We loved this recipe. I doubled the recipe and froze half, minus the Alfredo sauce, which I will add when I reheat it. - 3/5/09

    This was amazing!I am not a cook by ay stretch of the word, but thiswas extremely easy, fun to make, and everyone in my family ate it. We did not put green chilli's as my wife does nto like them, and it still turned out very good. Taste even better the next day! - 1/29/09
