Ingredients

    1 1/2 pounds cooked, skinless chicken breast
    1 1/2 cups water
    1 can diced tomatoes and peppers
    1 can tomato puree
    1 tbsp dried onions
    1 tbsp chili powder
    2 cups cooked rice

Directions

Dice chicken and set aside.
Make a sauce with the water, diced tomatoes, tomato puree, dried onions and chili powder. Cook 15 minutes.
Turn off heat. Stir in rice and chicken.

    This was great! Since I didn't have cooked chicken, I thawed frozen chicken breasts, put them in a baking dish with the tomato products and baked, covered, in the oven. While the chicken was baking, I made the rice. Then I added the rice to the pan. Everyone in the family loved it! Thanks! - 1/8/08

    I followed someone's advice about black beans and corn and rotell and it was really filling. I used a whole wheat wrap the second day it was really good. I kept the rice separate so I could freeze the leftovers and even have it on my baked potato. - 4/10/11

    Very good! I make something very similar to this but use a can of Rotel instead of the tomatoes & peppers, puree and onions, and substitute thyme and cumin for the chili. I also add a can of black beans and a cup of frozen corn. - 9/14/10
