Introduction

Ingredients

1 lb. ground turkey
taco seasoning mix
3/4 cup water
1 can of black beans
1 can Hunts Diced tomatoes w/ basil, garlic and oregano
Mission Tortilla Low carb tortillas
1 cup shredded cheese
lettuce (optional)
Directions
Brown ground turkey in skillet. Add 3/4 cups of water, beans and diced tomatoes. Simmer until desired consistency.
Lay your tortillas on the plates. Spoon meat mixture onto tortillas, add cheese and lettuce. I make mine open-faced but you can top it with another tortilla. Just dont forget to add the calories for the tortilla.

JENNMC77 - I rinsed and drained the beans, not the tomatoes, and I used the full 3/4 C of water. I let it simmer until the liquids boiled off to the consistency I like for tacos. - 6/11/09

Very easy & very tasty, but I found the liquid to be way too much. I even used 2/3 cup instead of the 3/4 and partially drained the beans & tomatoes, but it was still too liquidy & never got to the consistency I typically like for tacos. I'll definitely make again but I'll cut the water way down. - 5/6/09
