Ingredients

1/2 cup chopped onion
2 cloves garlic, minced
3 tbsp olive oil
1/3 cup chilli powder
2/3 cup salsa
1/4 cup water
1/2 tsp ground cumin
1/2 tsp ground cinnamon
3-4 or 1 pound chicken breats, cooked and shredded
salt, to taste
six 10 inch tortillas
1 cup refried beans
Directions
1. preheat the oven to 425 degrees and grease a baking pan
2. in large saucepan, saute the onion and garlic in 2 tbsp oil until tender. Stir in the chilli powder, salsa, water, cumin, and cinnamon. Pour the mixture into a blender and process until smooth. Stir into the chicken and add salt to taste.
3. working with one tortilla at a time, spoon a tbsp of refried bean down the center and then top with the chicken mixture.
4. place the chimichangas in the greased baking pan, seam side down. brush side with the remaining olive oil
5. bake for 15 minmutes or until crisp, turning every 5 minutes and brusing other side with olive oil.
