Number of Servings: 4

Ingredients

    4 Tilapia fillets
    4 Tbsp. Salsa
    1 Tbsp. Extra Virgin Olive Oil
    4 Oz. Mozzarella Cheese
    Salt and Pepper to taste

Directions

Preheat oven to 400F. Line bottom of cooking pan in EVOO. Place Tilapia fillets in pan and coat with favourite salsa and salt and pepper to taste. Cook for 8 minutes. Sprinkle cheese on top of fillets and cook for another 2-3 minutes. Remove and serve.
Makes 4 servings.

    Delicious taste more like deep dish pizza than tilapia and great for someone needing a high fiber dinner I served it with seasoned collard greens (no fat added to collards. Yielded 70 cal for 1-cup collards and 4 grams additional Fiber. - 2/1/10

    SOOOOOO yummy and easy to make! I used them to make fish tacos tonight. We didn't put cheese on them while they were in the oven, we did it later when we made the tacos. It was my first time EVER cooking fish, and this is one of my new favorite recipes! - 12/1/09
