Ingredients

    2 Tablespoons Extra virgin olive oil
    1 Clove garlic, crushed
    1 Tablespoon Parsley, dried
    Crushed Red Pepper flakes (optional)
    12 oz. Fresh Scallops

Directions

Over medium heat, add olive oil, garlic, parsley and pepper (optional). Sautee lightly for about 1 minute, stir occasionally. Add scallops. Cook scallops until medium brown, about 3 to 4 minutes each side. Remove scallops from oil and serve over prepared brown rice. Reserve oil to drissle over steamed vegetable or as a bread dip.

    Lots of flavor! I served over brown rice and added some frozen spinach to the mixed. I liberally used garlic, parsley and the red crushed peppers! - 4/27/09

    Really good. Instead of rice I used whole grain pasta and cooked it in the pan with the remaining oil and juices from the scallops. Yum! - 7/1/12

    This was a great recipe! It was so fast and easy that dinner was done in no time! Even my super picky husband loved it and didn't put BBQ sauce on top of it....that's his way of "trying" something he knows he isn't going to like. I will definitely make this again! - 10/27/10

    Made this tonight, increased the amount of scallops to 16 oz and the garlic to 3 cloves since I needed to serve 6. It was very good, and I'll be making it again. - 1/21/10
