Ingredients

    1 large eggplant sliced
    1 qt tomato sauce
    8 oz part skim mozorella cheese
    .5 cup grated parmesean cheese
    4 egges, scrambled
    1 cup bread crumbs



Directions

Slice Eggplant. Dunk in egg, break crumbs. Spritz with olive oil sprya. Bake until softened. Layers eggplant, cheese, sauce, until all used up. Bake at 375 degrees until heated through (about 1 hour).

    This was very good. I used egg whites only. I sliced my eggplant thin and it cooked in half the time. I also, used less sauce and cheese and it still was quite yummy. - 5/26/09
