Introduction

I found this recipe on the internet and adapted it to fit into a healthier lifestyle. My family loves it so I thought I would share it. I found this recipe on the internet and adapted it to fit into a healthier lifestyle. My family loves it so I thought I would share it.
Number of Servings: 2

Ingredients

    1 Tbsp Smart Balance
    2 oz Turkey Ham
    1/4 tsp Minced Garlic
    3/4 lb Shrimp
    1 lb fresh, unshelled fava beans
    1 tsp minced fresh thyme
    salt and pepper, to taste

Directions

Clean and shell fava beans and set aside.

Heat SmartBalance in skillet over moderate heat. Add turkey ham and garlic and toss for a minute. Add shrimp, favas, and thyme and toss just until shrimp become pink.

Sprinkle with pepper and salt. Cover and cook on lowest heat possible for 1 to 2 minutes, or until shrimp are just cooked through and juices exude slightly. Serve immediately.

Tastes great served over brown rice.

This makes either 2 dinner portions or 4 smaller portions

    Delicious and so quick and easy! I used Canadian bacon instead of turkey ham since that's what I had on hand and it was fantastic. I will absolutely make this again. - 5/18/10

    Don't eat fava beans all that often, but this was really good. I happened to have all the ingredients on hand. - 8/27/09
