Ingredients

1 1/2 T extra virgin olive oil, divided
1 lb seafood (I used frozen kind and defrosted)
1/4 t sea salt
freshly ground black pepper, to taste
1 red bell pepper, thinly sliced
1 red onion, halvedlengthwise and thinly sliced
2 cloves garlic, minced
1 14.5 oz can no salt added diced tomatoes with basiland garlic
1/2 t crushed red pepper (or to taste)
2 T fresh parsley, chopped, for garnish
Directions
Heat 1 T of oil in large skillet over medium heat. Warm thawed seafood, season with salt and black pepper. Transfer to a bowl and set aside.
Heat remaining oil in same skillet and add red bell pepper; cook stirring frequently, for 5 minutes. Add onion and cook for 4 minutes, thn garlic for 1 minute, stirring constatntly.
Add tomatoes and crushed red pepper; stir well. Add shrimp and simmer until heated through, 1 minute. Great to serve over quinoa, rice, or pasta.
