Introduction

Found the Pilaf recipe on the Kashi 7 Grain Pilaf box, used 1/2 the recipe for the rice, the other half for the Salmon for a wholesome, delicious meal :) Found the Pilaf recipe on the Kashi 7 Grain Pilaf box, used 1/2 the recipe for the rice, the other half for the Salmon for a wholesome, delicious meal :)

Ingredients

    4- 4oz. Salmon Filets sprinkled with salt

    1/2 pouch of Kashi 7 Grain Pilaf
    1 Red pepper diced
    1/4 c. Pine nuts toasted

    Sauce (1/2 for Salmon, 1/2 for Pilaf)
    2 tbs balsamic vinegar
    4 tbs Extra Virgin Olive oil
    2 bunches of basil chopped
    1/2 tsb. Crushed Red Pepper Flakes (use less if you do not enjoy hotness!)

Directions

1.) Prepare Pilaf according to package.
2.) On medium heat toast pinenuts, tossing often
3.) In a small bowl mix together sauce ingredients
4.) Heat skillet with olive oil or spray-- add salmon filets, cook for a few minutes-- then add half of the sauce. Cook until Filets are flakey and lighter in color.
5.) In a bowl mix Pilaf with remaining sauce, Peppers, and pine nuts.
6.) Serve Salmon with rice on the side (also delicious with a veggie such as roasted brussels sprouts)
