French Lentil Soup with Tarragin and Thyme

Ingredients
1 T. olive oil1 large white onion, diced1 large carrot, diced4 cloves garlic5 plum tomatoes, seeded and diced2 t. dried tarragon1 t. dried thyme1 t. paprika6 cups vegetable broth or water2 cups french lentils1 1/2 tsp salta few pinches freshly ground black pepper
Directions
Makes 8 servings

Sautee the onions and carrots in olive oil for about ten minutes, until the onions are lightly browned.

Add the garlic, tarragon, thyme and paprika, and sautee about 2 minutes more.

Add the tomatoes, cover and cook for 5 minutes.

Add the water, lentils, salt and black pepper. Bring to a boil, then cover and simmer for 45 minutes.
