3 pink grapefruits, cut into segments(removing skin),saving the juice.1/4 cup olive oil 1 tbsp lime juice2 ripe Haas avocados,peeled and sliced1 large fennel bulb, sliced thinly 1 small bunch of mint leaves, juliennedGround black pepperSome sea salt
In a small bowl whisk the oil with the lime juice, grapefruit juice and some salt. Place the sliced avocado in a bowl and pour some of the dressing over it, tossing it very gently.
Now add the fennel with the rest of the dressing then add the mint and sliced grapefruit and toss well. Season with black pepper and a little more salt if required.
