Home-made apple jam

Ingredients
2 medium apples cored and peeled3/4 cup super fine sugar1 tsp lemon juice
Directions
Combine apples and sugar in a medium bowl. Microwave at high until apples are tender, 3 to 5 minutes. Beat softened apples with electric mixer until well blended.

Microwave at high until mixture is slightly thickened 3 to 4 minutes, stiring once during cooking time. Stir in lemon juice.

Makes 1 to 1 1/2 cups (about 20 tbsp)
Serves 10 servings 2 tbsp ea.
