Eggplant Roll-Ups (WW 5 Points)

Ingredients
Eggplant, fresh, 1 eggplant, peeled, sliced 1/4 inch thick lengthwiseShallots, 4 tbsp choppedGarlic, 4 clovesTomato & Basil Sauce, 1.5 cupExtra Virgin Olive Oil, 1 tbspLaughing Cow Light Creamy Swiss Original Cheese, 6 wedgesBasil, 10 fresh leaves shreddedParmesan Cheese, grated, 1/2 cup
Directions
Peel and Slice Eggplant.
Broil eggplant on on baking sheet until golden on both sides (15 mins).
Saute shallots & garlic until soft.
Add Tomato & Basil Sauce.
Transfer to baking dish.
Place 1 wedge of cheese and a basil leaf on one end of eggplant slice. Roll up.
Lay seam side down in sauce.
Top with Parmesan
Bake 10 to 15 minutes.
