Sweet and Sour Chicken

Ingredients
2 lb. boneless chicken breasts, cut into cubes2 tbs. oil1/2 cup green pepper strips1/2 cup red pepper strips1 cup carrot strips1 garlic clove, minced1 tbs. cornstarch1/4 cup soy sauce1 8-oz. can chunk pineapple in juice3 tbs. vinegar3 tbs. brown sugar1/2 tsp. ground ginger 1 1/2 cups Original MINUTE Rice or Premium Long Grain Rice
Directions
Brown chicken in hot oil in large skillet. Add peppers, carrot and garlic; cook and stir 1 to 2 minutes. Mix cornstarch with soy sauce; add to pan with pineapple and juice, vinegar, sugar and ginger. Bring to a full boil. Meanwhile, prepare rice as directed on package. Serve chicken over rice. Mks 6 servings. small
