Grandmas Fresh Apple Cake

1 cup all purpose flour1 teas. baking soda1 teas. cinnamon1/2 teas. nutmeg1/2 teas. salt1 cup white sugar1 egg1/4 cup vegetable oil2 cups apple - peeled, cored, and chopped1/2 cup dried cherries or raisins, opt.
Preheat oven to 350 degrees. Grease and flour an 8X4 in loaf pan. Sift together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside
In a medium bowl, mix together the sugar, egg and oil, stir in the sifted ingredients. Will be very thick. Fold in the apples and raisins or cherries.
Bake for 55 to 60 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean. Makes 12 servings
