Palak Paneer made with Tofu

Ingredients
Big Box of organic Spinich (11oz)1T grape seed oil1.5 t cumin seed1.5 t brown mustard seed1 t ground turmeric1 c chopped onion1.5 T chile/garlic/ginger paste.5 block of firm tofu pressed, cubed and marinated in the cgg paste1T garam masala
Directions
steam the spinach and cool to warm and blend to puree
heat the oil in small skillet and fry the marinated tofu (I marinated it overnight) remove tofu to bowl
add the spices to the oil left in the pan and stir until the mustard seed begins to pop.
add the chopped onion and continue stirring until the onion is transparent
the spinach and stir
put in bowl and top with fried tofu
