1 lb. chicken breast2 tbsp. extra virgin olive oil2 tbsp. butter2 cloves garlic, minced1/4 cup flour1 tsp. salt1 tsp. pepper2 oz. white wine1/4 cup chicken broth1/4 cup lemon juice1 tbsp. capers
Pound chicken breasts between two pieces of waxed paper until thin. Put flour, salt and pepper into large ziploc bag and shake to combine. Meanwhile, heat oil & butter in heavy saucepan. Saute garlic. Add pounded chicken breasts to ziploc bag and shake to coat evenly. Pan fry approx. 4 min per side.
Remove chicken to plate and add wine, chicken broth and lemon juice to deglaze pan. Simmer until reduced by half and stir in capers. Pour over chicken.
