Quick and Easy Curried Chicken

Ingredients
2 Chicken Drumstick, skin removed4 Chicken Thighs, skin removed4 Tbsp Curry powder1 tsp Pepper, black3 tsp Salt2 tsp minced Garlic1 medium Onion raw.5 cup chopped Green Peppers2 medium Potatos, raw2 cups Swanson Chicken Broth 99% Fat Free3 cups water1 Tbsp. Cornstarch
Directions
Rinse chicken, pat dry and place in one layer in bowl or pan. Sprinkle with 2 TBSP Curry, 1 TSP Salt and Pepper, toss and set aside.
Wash vegetables. Chop potatoes, bell pepper and onion into 1 inch pieces.
In a large pot or pan add 1 cup chicken broth, 1 cup water, garlic and vegetables. Bring to a boil. Reduce heat and simmer for 10 minutes or until vegetables start to soften.
Return heat to high setting. Add remaining broth and 1 1/2 cups water, curry powder, salt and seasoned chicken. Bring liquid to a rolling boil. Reduce heat to medium-low and simmer covered, 30-45 minutes, until chicken is done. Mix cornstarch with remaining water. When chicken is done, bring mixture to a rolling boil and add water/cornstarch mixture, stirring until thickened.
Serve as is or over white rice (not included in calorie count).
