Pasta E Fagioli

Ingredients
1/3 cup of chopped onions1/2 cup of chopped celery1 medium tomato diced1 tablespoon olive oil4 cups of chicken broth1 1/2 cups of water3 oz. of tomato paste2 cans of white or red kidney beans8 oz. of whole wheat elbow pastaOptional garnish- Parmesan Cheese
Directions
Heat oil on medium in a large pot
Sautee onions and celery 3-4 minutes until soft
Add Chicken broth, water, diced tomato and tomato paste
Heat to a boil and reduce to medium heat
Add kidney beans and pasta(uncooked)
Heat at a slow boil 15-20 minutes or until pasta has cooked and absorbed a good amount of liquid
Optional- Dust with parmesan cheese, and Enjoy!
