Ingredients
2 T OIL1 MED ONION DICED2 CLOVES GARLIC MINCED1 SWEET POTATO PEELED AND CUT INTO 1/2" CUBES1 LB FROZEN CORN KERNLS, THAWED1/4 t GROUND CUMIN1/4/ t CHILI POWDER4 C PLAIN SOY MILK1/2 C DRY MASHED POTATO FLAKESSALT
Directions
IN OIL STIR FRY ONOIN 3 MINUTES, ADD GARLIC AND SWEET POTATO AND COOK STIRRING 1 MINUTE, STIR IN CORN,CUMIN AND CHILI POWDER.

INCREASE HEAT TO MED-HIGH ADD MILK, BOIL STIRRING OCCASIONALLY. PLACE LID ON POTLEAVING 1 INCH SPACE. REDUCE HEAT TO LOW SIMMER 12 MINUTES OR UNTIL SWEET POTATOES ARE SOFT.

SPRINKLE WITH POTATO FLAKED AND WHISH 1-2 MINUTES UNTIL MIXTURE IS THICK AND SMOOTH. SEASOMWITH SALT TO TASTE
