Elysa's Low Cal Pumpkin Pie

Ingredients
Fresh pumpkin (1 cup)Splenda No Cal Sweetener (8 Packets)Rice Dream, rice milk (2/3 cup)egg white (1/3 c)Pumpkin Pie Spice (2 tsp)Salt (1/4 tsp)Honey Maid Grahams Pie Crust (1 9")
Directions
Makes roughly 8 2 inch slices
Preheat oven to 375.
Brush pie crust with a little of the eggwhite. Bake in oven for 5 minutes.
Boil pumpkin flesh (not seeds or skin) like you would potatoes. Puree in food processor.
Mix Splenda, pie spice, salt, and remaining eggwhite together with a fork to smooth out lumps.
Mix in rice milk and pureed pumpkin until smooth.
Pour mixture into pie shell, carefully transfer to oven and bake for 50 minutes.
Cool and enjoy!
