Rustic Roasted Vegetables

Ingredients
1 Large Red Onion, cut into large chunks4 Large carrots, chopped thickly, skin left on1 lb. Red Potatoes, chopped thickly, skin left on2 Tablespoons Olive Oil1 Tablespoon Rosemary1 Tablespoon Basil1 Tablespoon Crushed Red Pepper2 Cloves Garlic, minced
Directions
Preheat oven to 400 degrees.
Place all vegetables, oil and seasoning into a bowl and combine with your hands.
Put foil on a cookie sheet.
Put vegetables on the cookie sheet and roast for approximately 30 minutes.

    I liked this dish, but was surprised how spicy it was! I made it using carrots, onion, bell peppers and zuchini. I will make it again reducing or omitting the red pepper. - 11/13/09

    I love roasted veggies, and you can substitute freely with your own favs. Mine happen to be onions, mushrooms, zucchini, summer squash & peppers. - 8/19/09

    This was a wonderful blend of spices with the veggies. I would recommend leaving out the white potatoes...just not much flavor. Add more sweet. Also, the garlic got a little over cooked...maybe add it half way thru the baking process. - 3/24/09
