Spicy Thai Peanut Noodles

1 Tbsp canola oil1 cup chopped onion5 garlic cloves, minced1/2 cup broth1/2 cup peanut butter1/2 tsp ground ginger2 Tbsp brown sugar3 Tbsp soy sauce1/8 tsp cayenne pepper1/2 cup water
1. In a pot or skillet heat oil over medium heat, add onions and garlic. Cook until tender, about 5 minutes.
2. Add other ingredients, bring to boil and simmer for 3 - 5 minutes, stirring often.
Serve over pasta and sprinkle with peanuts.
Makes 6 servings.

Is the calorie info just for the pad thai sauce? It looks really low for sauce with noodles and some sprinkled peanuts. - 2/20/09

The calories are just the ingredients listed, so no, it does not include pasta & peanuts. Wilma

Fiancé and I liked this a lot. I served it with pan-fried tofu, steamed broccoli, and udon noodles. Next time, fewer noodles and more broccoli. I think I may have cooked the sauce too long, as it was very thick at the end. Next time I won't cook it as long or will thin it a bit at the end. - 5/26/11

I made this recipe because I had leftover rice noodles and needed a sauce. IT WAS AWESOME. I didn't have ginger or cayenne pepper and it still turned out good....but I did add a tablespoon of really hot chili sauce. I will make this again and again! Just as good as eating as eating out Thai. - 2/15/10
