Easy Potato Cakes

1 packet instant mashed potatoAbout 1.5 cups flour (plain or self-raising)Dried mixed herbsSaltPepperButter (to fry)
Make up the mashed potato according to the instructions on the packet, add salt, pepper and dried (fresh, if you prefer) herbs to taste.
Add enough flour to turn the mixture into a kneadable dough.
On a floured surface, roll the dough out until it is about an inch thick. Using a scone or biscuit cutter, cut out circles of about 2-3 inches in diameter.
Fry the potato cakes on a medium-high heat in a little butter for 10-15 minutes, or until nicely browned on both sides.
Makes about 12 cakes.
