Mango Cucumber Green Salad

Ingredients
1/4 cup fresh lime juice2 tablespoons honey1 tablespoon red-wine vinegar1 teaspoon minced garlic1/4 cup olive oilSalt and freshly ground black pepper2 cups cubed mango, frozen/defrosted 1 head chopped romaine 1/2 seedless cucumber, cubed
Directions
1. Whisk together juice, honey, vinegar, and garlic. Add oil in a slow stream, whisking until emulsified. Season with salt and pepper.

2. Toss together mangoes, romaine, and cucumber with dressing, to taste.
