Reduced Sugar-Turtle Pumpkin Pie

1/4 c - Sugar Free Caramel ( Ice cream topping)1 - Graham Cracker Pie Crust1 c - Pecans1 c - Milk1 1/2 c - 100% canned pumpkin2 pkgs - Sugar Free Vanilla Pudding1 tsp. - Cinnamon1 c - Sugar free Cool Whip
Makes 1 pie
Pour 1/4 cup Caramel topping into Pie Crust.
Sprinkle 1 pkg (1 cup) of Pecans next.
Beat 1 cup cold Milk, 1 1/2 cup Pumpkin, 2 pkgs instant Vanilla Pudding, & 1 tsp cinnamon with whisk until blended.
stir in 1 cup cool whip
spread mixture in to pie crust
Refrigerate at least 1 hour before serving
Overnight works best
(Optional)
Top w/ additional cool whip & drizzle with a little caramel topping just before serving
