Pumpkin Mushroom Soup

Ingredients
4 Tbl. Smart Balance Butter Blend1 Tbl. curry powder1 lb. sliced mushrooms1 large onion, chopped1/3 c. flour8 c. chicken broth2 cans (1 lb. each) pumpkin2 c. half-and-half5 Tbl. honey
Directions
Sauté curry in butter blend about one minute. Add mushrooms and onions, and sauté several minutes, until onion is transparent and mushrooms release liquid. Stir in flour, cook three minutes over medium heat. Stir in chicken broth and pumpkin, and continue heating until mixture just boils. Reduce heat and simmer uncovered 20 minutes. Stir in half-and-half, and honey. Simmer gently 10 more minutes. Season with salt and pepper if desired.

Makes nine 2-cup servings.
