Egg and Cheese Frittata

Ingredients
8 eggsCooking Spray1/4c chopped onion1/4 c chopped green pepper (or colored)1/2 c shredded cheddar cheese1/2 t salt1/4 t pepper
Directions
In a bowl, mix together eggs, salt, pepper, and half of the cheese, set aside.
In a large skillet over medium-high spray with cooking spray. Then stir in onion and peppers, saute until onion appear clear. Turn burner down to medium and add egg mixture and cook, not to stir for at least 2-3 minutes. Then start to scramble eggs.
