Simple ‘TOP’ Salad

Ingredients
• 2 tablespoons red-wine vinegar• 1 tablespoon olive oil • pinch of Coarse sea salt and ground pepper • 1 pints cherry or grape tomatoes, halved• 1/4 cup finely chopped red onion• half of a green pepper, diced• parsley
Directions
1. In a medium bowl, add pepper, whisk together 2 tablespoons red-wine vinegar, 1 tablespoon olive oil, and sea salt until combined and slightly thickened.
2. Add halved tomatoes, chopped red onion, diced green peppers and sprinkle with parsley; toss to combine all ingredients.
