Ingredients
1 tbs olive oil4 slices prosciutto1 onion2 ribs celery2 garlic clovesmedium zucchinibay leaf1 cup white canelli beans1 cup garbanzo beanssalt and pepper3 c chicken stock1 cup small pasta1/2 lb. green beans10 oz. spinach1/4 c parmesan cheesebasil or parsley to top
Directions
saute prosciutto in soup pan, add onion, celery, garlic, zucchini, bay leave, stir 5 minutes, add canelli and garbanzo beans, add stock, add pasta and green beans to pot for 8 minutes, add spinach and cheese and stir. spoon into bowls and top with fresh basil or parsley

    My family LOVES this soup - it's very good, we often substitute bacon for the proscuitto - I make the pasta separately and add it at the end so it doesn't soak up all the liquid. - 10/11/10
