Maple-Bacon Breakfast Casserole

Ingredients
1 1/2 cup biscuit/baking mix1 tablespoon sugar3/4 cup milk (I used 1%milk)1/4 cup maple syrup4 whole eggs, fresh large1 1/2 cups shredded Cheddar cheese1/2 pound bacon, cooked and diced
Directions
In mixing bowl combine biscuit mix, sugar, milk, eggs, syrup, and 1/2 cup cheese. Mix well. Pour into greased 13x9x2 baking pan. Bake uncovered at 425 degrees for 10-15 min. or until toothpick inserted near center comes out clean. Sprinkle with bacon and remaining cheese then bake additional 3-5min. until cheese is melted. Serve with syrup if desired.

Makes around 12, 3in servings

We have made this recipe with crumbled sausage, it changes the nutritional value but it is still great either way. Enjoy.

    There's no way you can get 12 servings out of this so the nutrition info is not correct. It's only 4 eggs and 1/2 lb of bacon so that isn't going to feed 12 people unless they only eat a tablespoon of it. It would be more accurate to say it's 4 servings at almost 600 calories each - 12/30/15

    I've made this recipe a couple of times and it came out great every time! For those needing this meal to be lower in calories, a few substitutes like turkey bacon, no calorie sugar, etc. and the calories will drop by nearly 50 calories a serving! - 7/31/12

    I fixed this today for breakfast. It was very easy to prepare. I did bake the bacon first in the oven. My whole family loved it. I think that next time I make this I will omit the sugar as the syrup adds enough sweetness to it. Thanks for sharing. - 1/25/09

    This recipe was really good! I used turkey bacon because that's what we had in the house. I didn't add extra syrup, but my husband and our room mate both found it a bit dry, so they did. To quote our room mate, "IT'S LIKE AN OVERSIZED PANCAKE WITH CHEESE AND BACON AND HAPPINESS!" - 2/11/14

    I cooked this recipe this morning with some substitutes like I made homemade bisquick using finely grind pretzels. I also added red peppers, onions and mushroom. Also used mozzarella cheese along with cheddar. I also exchange bacon with turkey sausage. It was oh so good. Thanks for this recipe - 9/8/13
