Amy's Asparagus & Swiss Quiche (crustless)

20 spears asparagus1/2 c. milk (whole used in calculations)4 large eggs3 egg whitessalt & pepper to taste1 c. swiss cheese, shredded
Preheat oven to 350 degrees.
Cut asparagus into 1" pieces and cook until just tender (suggested cooking methods: steaming, boiling, or sauting).
Beat eggs, egg whites, and milk together thoroughly. Add salt & pepper to taste. Stir in cookied asparagus. Greased 8" or 9" pie pan. Pour egg mixture into prepared pan and top with cheese. Bake 20-30 minutes or until egg is set in the center of the pan--a knife will come out clean.
Makes 4 large portions.
