Quinoa and Red Potato Pilaf, Petitchef's, 1/6 is serving

Ingredients
2 cups quinoa2 medium red potatoes, total weight 200g, skin on, diced 1/2 tsp sea salt1/2 tsp cayenne pepper1 tsp curry powder1 tsp Bragg's liquid aminos, or light soy sauce1/2 T olive oil
Directions
Wash the quinoa several times and drain thru a mesh strainer until there is no more sudsy residue. In a stainless steel pot combine the quinoa and red potato, covering with double the volume of water. Add the satt and bring to a boil. Turn down to a simmer and continue cooking covered for 20 minutes or until the potatoes are soft. To season, toss in the remaining ingredients while still hot.
