Pirates pineapple chops

Ingredients
4 pork chops1 can (15 oz) of pineapple chuncks in juice1/2 cup of ketchup1 tsp of curry powder1 tsp of ground ginger1 small box of raisins1 tsp of black pepper1 tbsp of low sodium soy sauce1/2 cup of cider vinegar1 tbsp of unsalted butter1/4 cup of green bell peppers chopped1/4 cup of onions chopped3 tsp of brown sugar packed
Directions
Heat the butter in a non stick skillet add the pork chops and cook about 3 or 4 minutes on each side.
Mix together the remaining ingredients and pour over the pork chops. Bring to a slight boil, then reduce heat to low and simmer for 30 minutes or the pork chops are tender and cooked through.
Serve with brown rice and green beans if you would like.

    My husband said it tasted like sweet n sour pork. I used chili powder instead of curry and just a little because he can't have spicy. I used red wine vinegar instead of cider, it was all I had and it worked great. Wonderful dish! - 5/3/09
