6.5 oz Rotini (whole wheat)10 Black Olives (medium), quartered1.5 oz Baby Carrots, chopped1 cup Corn (thawed)1 cup Sweet Peas (thawed)2/3 cup Broccoli (thawed), chopped1/2 cup Red Bell Pepper, chopped1 cup Cucumber (peeled, seeded), chopped4 oz Colby & Monterey Jack, chopped1 cup Honey Mustard Dressing (lite)
While Rotini is boiling, chop all veggies & cheese and place in big bowl. Add dressing and stir to mix well. Drain Rotini and let cool in strainer. Once cooled mix Rotini into veggies and put in refrigerator for an hour or more (it's better the longer you let it sit).
This makes 7 - 1 cup servings.
