Hearty Bean and Rice Soup by BH&G

1 cup chopped celery, 3 stalks1 cup chopped onion, 3/4 large2 cloves garlic1 tbsp olive oil1 49 oz can chicken broth low sodium1 cup water1/2 cup arborio3 medium tomatoes1 medium zucchini1 bag baby spinch1 15 oz can great northern beans1/4 cup fresh thymeblack peppersalt
1. In a dutch oven cook the celery, onion, and garlic in olive oil until tender.
2. Add broth, water, and uncooked rice. Bring to a boil. Cover and reduce to a simmer for 15 minutes.
3. Add chopped tomatoes, zucchini, spinich, beans, thyme, salt, and pepper.
4. Simmer until heated through and spinich is wilted.
Makes 9 (about 1 cup - 1 1/2 cup) 325g servings
Fridged 4 individual servings, reheated great.
Froze 5 individual servings.
