Black Bean Cucumber Salad

Ingredients
1 cup frozen corn, thawed1 can black beans, drained3 lg. tomatoes, diced, seeded or one can diced tomatoes, drained1 med. onion1 cup celery, diced1 lg. jalapeno pepper, seeded1 lg. cucumber, seeded and chopped4 Tb. cilantro2 Tb. cider vinegar1 Tb. flaxseed or extra virgin olive oil
Directions
Combine first 7 ingredients, in small container combine oil and vinegar, shake well, mix into salad. Serve chilled.

This is also very good with white fish or tuna stirred in. If you like extra spicy food, leave in jalpeno seeds and/or add pepper sauce.
