Slow Cooker Hearty Vegetable Beef Soup

Ingredients
12 oz. beef chuck steak, cubedCooking spray1 cup raw carrots, sliced1 cup raw zucchini, sliced2 cups raw tomatoes, diced1/2 cup raw onion, diced1 cup of celery, sliced2 cups raw potato, cubed1 cup frozen cut green beans1 cup frozen niblet corn1 cup frozen baby lima beans1 cup frozen petite peas2 tbsp. dried parsley flakes1/4 cup of cornstarch1 cup of water1/4 cup of tomato paste1 tbsp. salt2 tbsp. black pepper
Directions
Cube beef chuck steak. Brown in cooking spray. Place in 3 or 4 quart slow cooker.

Peel potato and dice into small cubes. Add all vegetables, fresh and frozen to slow cooker.

Mix corn starch with the water until well blended and smooth. Add tomato paste to cornstarch mixture and stir until smooth. Pour over beef and vegetables in the slow cooker.

Add enough water to the slow cooker to cover all ingredients. Stir well. Cover and cook on low 10 to 12 hours.

Makes about ten 2 cup servings
