Easy Quinoa and Black Bean Salad

Ingredients
1.5 - 2 cups cooked quinoa1 can black beans (drained)1 cup canned corn (drained), or frozen corn (cooked and cooled)1/4 cup olive oil2 Tbs vinegar1 Tbs chili powder1 Tbs garlic salt
Directions
1. Cook and cool quinoa (I use my leftover quinoa).
2. Add black beans, corn, oil, vingar, chili powder, and garlic salt.
3. Mix well.
4. Serve chilled.

    I like quinoa and this recipe was so easy to make - its rarely that I have all the ingredients in my cupboard. I cooked the quinoa in chicken broth and added some cilantro for added color and people loved it. - 5/26/09

    Sounds delicious! I have been adding a can of petite diced tomatoes lately, too. Yummy.
