4.3 oz langostine tails4.5 oz raw bay scallops1 red bell pepper, sliced1/2 onion, thinly sliced2 egg whites, beaten100g frozen peas2 1/2 cups cooked brown rice1-2 tbsp olive oil1/8 cup lite soy sauce2 tsp minced garlic
Preheat wok, add 2 tsp olive oil. Stir fry onion and peppers over high heat, stirring constantly until slightly softened. Remove from pan and drizzle pan with olive oil. Cook langostine tails and scallops until just opaque. Transfer to separate bowl. Drizzle pan again with olive oil and cook egg whites until softly scrambled. Remove from pan. Drizzle pan with olive oil and add cooked rice, followed by frozen peas. Stir this around pan until peas begin to defrost. Then add in onion/pepper mixture, shellfish, and eggs. Continue to stir together.
Mix minced garlic and soy sauce together and add to wok, tossing to coat all rice. Continue to stir fry for about a minute more.
Makes 5 1-cup servings.
