chickpea crepes

Ingredients
1 1/2 cups chickpea flour1 tsp. salt1 1/2 tsp. ground cumin1/4 tsp. pepper1 1/2 cup water1/4 cup olive oil + more for frying
Directions
sift together flour, salt, cumin, and pepper. Stir in water with a whisk, try to get batter as smooth as possible. Blend in olive oil. Let batter stand for at least 15 minutes.
Heat an 8-in nonstick saucepan, spray pan with a light coating of olive oil or cooking spray. Ladle batter, 3 tblsp. at a time, into pan, cook 30 seconds on each side, until lightly golden.

6 servings of two crepes each.
