Vegan Banana Chocolate Chip Pancakes

Ingredients
1.5 cups whole wheat flour1.5 tsp baking powder.5 tsp baking soda.25 tsp salt.5 tsp cinnamon1 tbsp Earth Balance Buttery Spread (or other vegan butter)1.5 c soy milk (I use Silk)1 tbsp vinegar1 tsp vanilla extract2.5 tbsp vegan chocolate chips
Directions
Mix all the dry ingredients together.
Melt the 'butter' and mash it in with the bananas and vanilla. Make sure the bananas are mashed well.
Mix the vinegar and soy milk and let stand for 5 minutes.
Combine all ingredients and mix well. Add the chocolate chips. Stir well.
Cook over medium-low heat.
Makes 7 good-sized pancakes!

    I forgot to mention - it's up to you. My hubby and I like 2, but when my stepson has them, he only likes 1 added. It's really dependent on how "banana" like you want them :)
